The Glass Pudding is in fact made of flour, with traces of beetroot powder that makes up its colour. It was formulated after many experiments with flour as the building material, with steam as its primary formation mechanism. The Glass Pudding has a tapioca flour base and gets its marbled colours from coagulated beetroot powder added to the mixture before steaming and cooling.
